Fruit Pizza

This is a great summer recipe but you can do it any time of the year.  You can use whatever fruit is in season.  A little tedious to assemble but definitely worth it!



The "crust" is actually made of sugar cookie. You can use your own sugar cookie recipe but I was being lazy so I bought two (16 oz.) packages of Pillsbury Refrigerated Sugar Cookie Dough. Stick it in the freezer for about 20 minutes so it's easier to handle. You don't wanna roll it out like a regular pie crust (don't roll it out to the edges of the pan) because it IS a cookie so it will still "spread out" as it cooks. Bake it at a preheated 350 degrees F oven for about 15-18 minutes or until slightly golden brown and set it aside to cool.


In a separate bowl, cream one (8 oz.) package of cream cheese with 1/2 cup of sugar and 2 tsps of vanilla. Spread over cookie and decorate with your favorite fruits.


TIPS:
* Make sure the cream cheese is in room temperature before you cream it with the sugar to prevent lumps.
* Make sure the cookie is completely cool before spreading your cream cheese and sugar mixture to prevent the cream cheese from 'melting'.
